Meal Planning Sunday #23

For the first time in a LONG time we have sunshine and warm weather…this week is all about grilling and food that tastes good on warmer days, but also quick, easy, and healthy meals for my busy family.

Sunday: BBQed hot dogs and Basil and Tomato Pasta Salad

Monday: This is almost too funny/embarrassing to admit…Egg Salad Sandwiches and veggies (carrot/celery/cucumber sticks) and a fruit salad. Between yoga and baseball, we need a quick and easy favorite…

Tuesday: Grilled Burgers (mine is in a lettuce wrap) with left over pasta salad.

Wednesday: Club Sandwiches with veggies and fruit

Thursday: Grilled Chicken and grilled veggies on hoagies (I eat mine sans hoagie roll) with homemade sweet potato fries

Friday: Nacho Bar (Cinco De Mayo) and probably a a Corona with salt and lime.

I am also going to make Blackberry Buckle {A Coffee Cake} for breakfast on Saturday morning.

This is a great make-ahead for breakfast. I plan on making it on Friday night so it is ready to go on Saturday.

What is on your menu this week? Does your family have a funny favorite meal that you can always go to in a pinch? And if I am being honest, cereal or popcorn would probably be our second go-to! Ha!
