Grilled Chicken and Spinach Salad Wraps

Grilled chicken, fresh strawberries, goat cheese (or substitute with feta), fresh spinach and zesty balsamic vinegrette make lovely wrap. A yummy, healthy, and filling lunch that is easy to make. I love making big salads and then stuffing them into a wrap. This recipe has always been one of my favorite salads for lunch, but I thought I would change it up by putting it into a whole wheat tortilla. This is a perfect lunch for spring and summer.

You will need:

2 cups of rinsed and dried fresh spinach
1 1/2 cups diced strawberries
1 Tablespoon of crumbled goat cheese
1 cup of shredded grilled chicken
1 whole wheat tortilla (or any tortilla of your choice)
2 Tablespoons Balsamic vinaigrette
1 Tablespoon of chopped walnuts or pecans

For the vinegrette:

1/4 vinegar
3 tablespoons of water
1/2 cup oil
1 package of dry, Good Seasons Zesty Italian dressing

I use the Good Seasons cruet, you can find it next to the dressings at WalMart. Also, all the measurements are imprinted on the glass shaker for your measuring ease.

-Instead of using regular white vinegar (which I have used and LOVE) I like using a Balsamic, it just adds a deeper flavor to the dressing.

Begin by grilling and then shredding chicken.


Mix lettuce, and chop strawberries.

Crumble a small amount of goat cheese.

Mix in walnuts and balsamic vinaigrette.

Once the salad is mixed, place in tortilla, serve and enjoy!
