We are on Spring Break this week and sun is in our forecast as well. We are hoping to be able to eat some of our dinners outside on the warmer evenings. Here is our meal plan for Spring Break!
SUNDAY: Taco Salad. I love using Jenny-O ground turkey as the meat in this salad. My husband loves it too because as big of a beef eater as he is, he really likes ground turkey as a substitute for taco meat. I am also subbing dressing for salsa.
MONDAY: BBQ Hot Dogs. It is the Seattle Mariner’s opening day and we are celebrating with BBQ hot dogs and a green salad.
TUESDAY: Kids Cook-Spaghetti. One thing Maddi and Guy asked to do over Spring Break was to cook dinner. They decided on spaghetti, salad, and garlic bread. I cannot wait for dinner on Tuesday. Any meal mama doesn’t have to cook is a good meal!
WEDNESDAY: Cobb Salad. Crunchy lettuce, tomatoes, bacon, hard boiled eggs, spinach, cucumbers, carrots, snap peas, cauliflower. Mmmmm. This will be the perfect dinner to eat outside and everyone can build their own salad.
THURSDAY: Marinated Chicken Breast with grilled corn on the cob.
FRIDAY: Pizza night!
