Hello! We are heading into the last full week before Christmas Break begins. It has been snowy and cold and expected to be in the teens next week with continued snowfall. This weeks meals are simple, but comforting and filling. Great to eat in the glow of Christmas lights and watching the snow fall outside.
Sunday: Pulled pork sandwiches and potato salad. On Saturday we celebrated Christmas with Brandon’s parents so I put a LARGE pork shoulder picnic roast in the oven at 250 degrees over night, pulled it out of the oven on Saturday morning and put it in the crockpot to warm all day. We will have left overs tonight.
Monday: Pork carnitas. I am going to use the restof the pork roast and serve it with fresh lime juice and cilantro on corn tortillas. Simple and easy and the hard part (cooking the roast) is already done.
Wednesday: Shells and Cheese. I am leaving out the bacon and the peas.
Thursday: Turkey club sandwiches
Friday: Homemade pizza night! We grill it on our Traeger and it is always so good.
Saturday: Christmas Party. This is a night FULL of appetizers! Is anything better than a meal of appetizers? I am thinking about making the crazy ranch, cheddar and bacon bread and will make my sausage balls as well.
